I love baking cupcakes as you, my readers, know already based on previous cupcake posts. I have been annoyed by the issue that my cupcakes have been too dense and flat so I searched high and low through google and pinterest for the perfectly domed cupcake recipe. I have tried a few and all have collapsed in the middle after baking. What is a gal to do? Simple, experiment more to find her own recipe! So I did and these root beer cupcakes are the result of my mad scientist like baking. (Recipes for the cupcakes and frosting will be at the end of this post.)
I read on some sites that its not about the ingredients you use but how they are combined. So I mixed my bland ingredients first--flours baking powder, and salt. Then I melted (not creamed as other recipes called for) my butter, milk, and sugar together. You'll have to watch the pot carefully since sugar burns way to easily (which is why I also added the milk into the pot.)
My mixer blades were in the dishwasher from yesterday's failed attempt at the perfectly domed cupcakes so I mixed my melted pot of ingredients into my dry mix. I then whisked in vanilla extract and the vegetable oil. I found if I spray my cupcake pan with butter spray it is much easier to remove the cupcakes later, so lightly spray the pan before placing your liners. I would say I filled these about 4/5ths of the way full. The recipe made 18 cupcakes total.
Vanilla Cupcakes
3 cups flour
2 1/2 tsp baking powder
1 tsp salt
1 cup butter
2 cups sugar
2 eggs or 1/2 cup of vegetable oil
1 cup milk
vanilla extract
1) Preheat oven to 350 degrees
2) Mix flour, baking powder, and salt
3) Combine butter (cubed), sugar, and milk into a medium sized sauce pan until melted, stir often
4) Pour the melted combination into your dry ingredients, mix well
5) Add eggs/vegetable oil and as much vanilla extract you like depending on how strong you want them
7) Line your cupcake pan and fill the liners with batter
8) Cook for 25-30 minutes or until done (poke the middle of a cupcake with a toothpick if it comes out clean they are finished.)

1 cup butter
2 1/2 cups powdered sugar
2 tbs root beer flavoring
Combine the ingredients well (an electric mixer is the best way to do this)
For a brown colored icing use food coloring to achieve the desired color.
